Cool as a Cucumber: an Easy Summer Snack with Wasa USA

Fellow southerners… is there anything more refreshing in the summer than a cucumber sandwich? The answer is no.

That’s why, for the third and final installment of Wasa Wednesday, I decided to channel my love for this simple but delicious sandwich and turn it into an easy, tasty snack that you can enjoy all year long.

Like the other two Wasa recipes I’ve shared (here and here!), this one requires 5 ingredients or less… 4 to be exact! I used Wasa Thins – Sesame and Sea Salt flavor. These are incredibly light crackers (hence the name), but they still hold their own very well with heartier toppings! They’re packed with flavor, and at only 80 calories per serving and 7 grams of whole grains, they make for a great healthy snack.

In lieu of Duke’s Mayonnaise (traditional of a real southern cucumber sandwich), I opted to use the garlic & herb flavored Boursin cheese. Pro tip: make sure to leave it out for about 30 minutes or so before use – it will spread onto the crackers so much easier!

I spread a generous amount of Boursin on top of the crackers, and topped with (very) thinly sliced cucumber and fresh dill. You could also add fresh ground black pepper or crushed red pepper flakes if you want a little kick!
